Toshimaya è il più antico produttore di sake di Tokyo le cui origini risalgono al 1596 quando il fondatore, Toshimaya Juemon, decise di aprire nella centrale zona di Kamakuragashi una rivendita di sake presso la quale era anche possibile consumare alcuni piatti frugali. In quel periodo, per via dei lavori di ristrutturazione del castello di Edo (l’attuale Tokyo), molte persone si concentravano nell’area di Kamakuragashi dove c’era un porto fluviale e gli affari di Toshimaya poterono felicemente prosperare.
Quando Juemon decise di iniziare a produrre shirozake(sake bianco), la sua reputazione crebbe in tutta Edo. Si dice che l’usanza di offrire questa bevanda durante la tradizionale festa delle bambine (hinamatsuri), per augurare loro una sana crescita, abbia da qui inizio. Questo dolce liquore di riso godeva, infatti, di grande popolarità tra le donne del tempo. Numerosi sono, inoltre, i romanzi e i brani di Kabuki, una delle tradizionali forme teatrali giapponesi, in cui è menzionato lo shirozake di Toshimaya. Ancora oggi lo shirozake è prodotto, mantenendo immutato il processo di lavorazione, una sola volta all’anno.
Attualmente la fabbrica è situata nella città di Higashi Murayama, nella zona occidentale di Tokyo, ed è dedita alla produzione di sake, shirozake e mirin, un particolare tipo di sake da cucina.
Il nostro sake “Kinkon” è stato insignito numerose volte della medaglia d’oro al Concorso Nazionale per il sake dell’anno, ed è la bevanda sacra offerta in famosi santuari shintō come Meiji Jingu e Kanda Myojin.
“Kinkon” (in italiano “nozze d’oro”) è realizzato con cura dai nostri mastri e siamo lieti di offrirlo a un vasto pubblico di estimatori come uno dei sake rappresentativi di Tokyo.

Toshimaya has its origins in the sake store and tavern opened by the founder, Toshimaya Juemon. The premises first opened at Kanda/Kamakura Waterfront (near the present-day Kanda Bridge in downtown Tokyo) in the first year of the Keicho era (1596).
When Juemon began brewing shirozake (white sake), it gained a reputation throughout Edo (the present-day Tokyo). And it was from this time that the Japanese custom of offering shirozake on Girls’ Day, the annual event during which people pray for girls’ healthy growth, is said to have begun.
Since the founding of our business, which has sake at its core, we have always observed the family motto passed on by word of mouth, “The customer and sincerity – first”. Our company’s code of conduct is based on “Continuity with Change”, whereby we preserve what should be preserved, while changing what needs to be changed.
